Kaffir Lime Macaroons
Ingredients:
- 3 cups shredded coconut
- 1 cup sweetened condensed milk
- 2 teaspoons kaffir lime zest
- 1 teaspoon vanilla extract
- Pinch of salt
- Green food coloring optional
- 1/2 cup white chocolate chips for drizzling
- Kaffir lime leaves for garnish
Instructions:
Warm your oven up to 325F 165C and put parchment paper on a baking sheet
Shredded coconut, sweetened condensed milk, kaffir lime zest, vanilla extract, and a pinch of salt should all be mixed together in a bowl
You can make the color stronger by adding a few drops of green food coloring
Mix the ingredients together slowly with your hands until they are well mixed
Cut the mixture into little balls and shape them into macaroons
You can use your hands or an ice cream scoop
Leave some space between each macaroon when you put them on the baking sheet that has been prepared
Before you put the macaroons in the oven, heat it up
Bake them for 15 to 18 minutes, or until the edges are golden brown
Take them out of the oven and let them cool for a few minutes on the baking sheet
Then, move them to a wire rack to cool all the way down
Melt the white chocolate chips in a microwave or a double boiler while you wait
Spread the melted white chocolate over the macaroons once they are completely cool
Put a small kaffir lime leaf on top of each macaroon to make it look nice
Let the chocolate set before you serve it or put it away in a container that won't let air in
