Vegan Cinnamon Roll Bread Pudding
This vegan version of traditional bread pudding has the tastes and textures of cinnamon rolls and bread pudding. It's a delicious treat for breakfast or dessert that's great for any event.
Ingredients:
- 6 vegan cinnamon rolls, cut into cubes
- 2 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1 tablespoon ground flaxseed
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped pecans or walnuts optional
Instructions:
Set the oven to 350F 175C and heat it up
Mix almond milk, maple syrup, ground flaxseed, vanilla extract, cinnamon, nutmeg, and salt in a bowl using a whisk until everything is well mixed
In a baking dish, put the cinnamon rolls that have been cut into cubes
Make sure the cinnamon roll cubes are all covered in the almond milk mixture as you pour it over them
If you want, you can sprinkle chopped nuts on top
After the oven is hot, bake the bread pudding for 30 to 35 minutes, or until the top is set and golden brown
Take it out of the oven and let it cool down a bit before you serve it
If you want, you can serve it warm with a drizzle of maple syrup or a dollop of vegan whipped cream
