Paleo Tandoori Chicken Skewers with Mango Chutney and Cauliflower Rice



These Paleo Tandoori Chicken Skewers are marinated in coconut yogurt and aromatic spices, then grilled to perfection. Served with fresh mango chutney and cauliflower rice, this dish is a flavorful and healthy option that's Paleo and Whole30 compliant.

Ingredients:

  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut yogurt
  • 2 tbsp tandoori spice mix
  • 1 large mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small head cauliflower, grated
  • 2 tbsp ghee or coconut oil
  • Salt and pepper to taste

Instructions:

In a bowl, mix coconut yogurt and tandoori spice mix

Add chicken cubes to the marinade, coat well, and let it marinate for at least 30 minutes

While the chicken is marinating, prepare the mango chutney by combining diced mango, red onion, and cilantro in a bowl

Mix well and set aside

Heat ghee or coconut oil in a pan over medium heat

Add grated cauliflower and saut until tender

Season with salt and pepper to taste

Keep warm

Thread marinated chicken cubes onto skewers

Preheat grill to medium-high heat

Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked

Serve the tandoori chicken skewers with mango chutney and cauliflower rice
