Slow Cooker Taco Chili
This Slow Cooker Taco Chili is a hearty and tasty meal that's great for days when you're busy. The whole family will love this meal, which is full of ground beef, beans, vegetables, and spices. Leave it alone until it's time to enjoy!
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 15 oz diced tomatoes
- 1 can 8 oz tomato sauce
- 1 packet taco seasoning mix
- 1 cup chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, tortilla chips
Instructions:
In a skillet, cook ground beef, onion, bell pepper, and garlic until beef is browned and vegetables are softened
Drain excess fat
Transfer cooked beef mixture to a slow cooker
Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning mix, and chicken broth to the slow cooker
Stir well to combine
Cover and cook on low for 6-8 hours or on high for 3-4 hours
Season with salt and pepper to taste
Serve hot, garnished with shredded cheese, sour cream, diced avocado, chopped cilantro, and tortilla chips if desired
